Ingredients
3 cups sliced zucchini
2 1/2 cups sliced mushrooms
1 medium red bell pepper, cut into strips
2 tablespoons olive or vegetable oil
1 cup (4 ounces) Shredded Parmesan Cheese
How to make Skillet Zucchini
Cook and stir zucchini, mushrooms and pepper in oil over medium-high heat 5 to 6 minutes or until vegetables are crisp-tender.Remove from heat.
Sprinkle with Parmesan cheese; cover.
Let stand 2 minutes before serving.
