Skillet Squash Recipe
Ingredients
| 3 tablespoons olive oil, butter, or margarine | ||
| Garlic | 1 Clove (5gm), pressed | |
| 6 medium-size zucchini, cut crosswise into | ||
| 1/4-inch-thick slices | ||
| 1 tablespoon each minced parsley and thinly | ||
| Sliced green onion including top | ||
| Dry oregano | 1 Teaspoon | |
| Sugar | 1/4 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Heat oil in a wide frying pan over medium-high heat.
Add garlic; cook, stirring, for 2 to 3 minutes.
Add zucchini and cook, stirring often, just until tender-crisp to bite 3 to 5 minutes.
Stir in parsley, onion, oregano, and sugar.
Season to taste with salt and pepper.
Continue to cook, stirring, until zucchini and seasonings are well blended 1 to 2 more minutes.
Add garlic; cook, stirring, for 2 to 3 minutes.
Add zucchini and cook, stirring often, just until tender-crisp to bite 3 to 5 minutes.
Stir in parsley, onion, oregano, and sugar.
Season to taste with salt and pepper.
Continue to cook, stirring, until zucchini and seasonings are well blended 1 to 2 more minutes.
