Skillet Fish Italiano Recipe
Skillet fish italiano is a flavorful cooked fish recipe. Made with vegetables, and mushrooms the skillet fish italiano is prepped with lemon juice and herbed with oregano. Finished with a topping of cheese, it is simmered till the cheese melts and coats the fish on top.
Ingredients
1 small onion, sliced
2 tablespoons margarine or butter
1 pound fish fillets, fresh or frozen, thawed
1/4 cup Lemon Juice from Concentrate
1/2 teaspoon oregano leaves
2 cups sliced zucchini
1 cup sliced fresh mushrooms
1/2 cup chopped tomato
1/2 cup (2 ounces) shredded Swiss cheese
Directions
In large skillet, cook onion in margarine until tender.
Add fish fillets, juice, oregano, zucchini and mushrooms; cover and simmer 10 minutes.
Top with tomato and cheese; cover and simmer 2 minutes or until cheese melts.
