Ingredients

 Ground pork1 Pound
 Parsley1/4 Cup (16 tbs), finely chopped
 Basil1 Tablespoon, finely chopped
 Mozzarella cheese1 Pound, sliced
 1 loaf Italian bread with crust removed, sliced
 Eggs3 , Well beaten
 2 cups fine bread crumbs
 Oil or lard, for deep frying
 Salt To Taste
 Pepper To Taste

Directions

Salt and pepper the meat; add the parsley and basil.
Mix well and form into 1 1/2-inch [4-cm.] round patties.
Cut the cheese and the bread into round slices, or medallions, of the same size.
On skewers, place in turn a medallion of bread and one of cheese, and a meat patty, repeating until each skewer is full, with bread at each end.
Roll the skewers in the eggs, then in the bread crumbs, and deep fry in oil or lard.
Slide the contents of the skewers off onto a large platter for serving.
