Skate With Grapefruit Recipe
Ingredients
2 1 lb skate wings, cleaned
1 tbsp vinegar
1 tsp parsley
1 bay leaf
2 tsp butter
1 onion, chopped
1 cup grapefruit juice
1 tbsp capers
Salt and pepper
1 grapefruit, peeled, pith removed, sectioned
Directions
In a casserole dish, cover skate with salted water.
Add vinegar, parsley and bay leaf.
Bring to a boil.
Simmer 15-20 minutes.
Remove skate.
Skin fish, detaching fillets.
Transfer to a serving dish.
Keep warm.
In a skillet, melt butter.
Lightly cook onion.
Add grapefruit juice and capers.
Season.
Bring to a boil.
Simmer 1 minute.
Spoon sauce over fish.
Add vinegar, parsley and bay leaf.
Bring to a boil.
Simmer 15-20 minutes.
