Skate With Grapefruit Recipe
Ingredients
| Skate wings | 2 1 Pound, cleaned | |
| Vinegar | 1 Tablespoon | |
| Parsley | 1 Teaspoon | |
| Bay Leaf | 1 | |
| Butter | 2 Teaspoon | |
| Onion | 1 , chopped | |
| Grapefruit juice | 1 Cup (16 tbs) | |
| Capers | 1 Tablespoon | |
| 1 grapefruit, peeled, pith removed, sectioned | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a casserole dish, cover skate with salted water.
Add vinegar, parsley and bay leaf.
Bring to a boil.
Simmer 15-20 minutes.
Remove skate.
Skin fish, detaching fillets.
Transfer to a serving dish.
Keep warm.
In a skillet, melt butter.
Lightly cook onion.
Add grapefruit juice and capers.
Season.
Bring to a boil.
Simmer 1 minute.
Spoon sauce over fish.
Add vinegar, parsley and bay leaf.
Bring to a boil.
Simmer 15-20 minutes.
