Skate In Cider Recipe
Ingredients
| 2 lb skate | ||
| Butter | 1 Ounce | |
| Flour | 1 Ounce | |
| 3 tabs. cream | ||
| Cider | 1/2 Pint | |
| Onion | 1 Small | |
| 1 tab. wine vinegar | ||
| Salt | 1 Pinch | |
Directions
Cut fish into 4 portions.
Put cider, vinegar, sliced onion and salt into a saucepan and bring to the boil.
Immerse the skate in this liquid and simmer for about 30 minutes.
Drain, and keep about 1/2 pint of the liquor for the sauce.
Put the fish into a fireproof dish and keep hot.
Melt the butter, thicken with flour, and gradually add the cider liquor.
Stir continuously, and cook for a few minutes after thickening.
Remove the pan from heat, stir in cream, pour over the skate and serve immediately.
Lemon or orange wedges, parsley or watercress, make an attractive garnish.
