Simply Super Salmon With Lemon Oregano Pesto Recipe
Ingredients
1/2 cup lightly packed parsley sprigs
2 tbsp chopped fresh oregano
1 clove garlic, minced
2 tbsp olive oil
2 tsp grated lemon zest
2 tbsp freshly squeezed lemon juice
Salt and pepper
1 salmon fillet, unskinned
Directions
1. In a food processor or mini chopper, combine parsley, oregano, garlic, oil, lemon zest and juice; season with salt and pepper to taste. Puree until very smooth.
2. Arrange salmon in a shallow glass dish; coat both sides with pesto. Let stand at room temperature for 15 minutes or cover and refrigerate for up to 2 hours.
3. Place salmon skin-side down on greased grill over medium-high heat; cook 4 to 5 minutes for each side (allow 10 minutes per inch [2.5 cm] thickness) or until fish is opaque, and flakes easily with a fork. (Alternatively, arrange salmon on broiler pan 4 inches [10 cm] below broiler; cook for 5 minutes on each side or until fish is opaque and flakes easily with a fork.) Cut salmon into 4 portions and serve.
