Ingredients
1/4 cup water, nonfat chicken broth, vegetable broth, or wine
1 medium onion, chopped
2 cloves garlic, minced
1/4 cup chopped red bell pepper
2 cups chopped fresh tomatoes or low-sodium canned plum tomatoes, drained
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
1/4 cup chopped fresh parsley
1/2 teaspoon dried basil leaves
1 stalk celery, finely chopped
1/4 teaspoon black pepper
1/2 teaspoon brown sugar, firmly packed
Directions
Place water, broth, or wine in a saucepan over medium heat.
Add onion, garlic, and red pepper.
Cook and stir over low heat for 5 minutes.
Add more liquid if necessary during this process.
Add the tomatoes, thyme leaves, oregano leaves, parsley, basil, and celery.
Cover and cook over low heat for 15 minutes.
Stir in pepper and brown sugar.
