This is the simplest of the marinades, for steeping meat during 2 to 6 days, either to make it tender or to increase or to change its flavour, or to preserve it.
Mix one tablespoonful of mild or wine vinegar with 3 table-spoonfuls of oil; add sliced onions, thyme, bayleaves, parsley, slices of lemon, cloves of garlic, shallots, cloves, peppercorns, and a very little salt.
The quantity you make depends on the amount of meat you have to steep, obviously, but you need not make a great deal, it is not necessary to cover the meat with it, as long as you baste it frequently.
This marinade will preserve the meat perfectly.
If you want to use the liquid to make a sauce while the meat is cooking, add to whatever quantity you take of it, as much red or white wine as also of oil.
