Ingredients

 
1 cup (240 ml) Flour
 
1/2 cup (120 ml) sugar
 
1/2 tsp (3 ml) salt
 
1 tsp (5 ml) baking soda
 
2 tsp (10 ml) baking powder
 
1 cup (240 ml) yellow cornmeal
 
1 cup (240 ml) milk
 
2 eggs
 
2 tbs (30 ml) canola oil

Directions

Preheat oven to 425°F (220°C).
Combine and mix dry ingredients.
Add milk, eggs and canola oil.
Pour into greased 8- or 9-inch cast-iron skillet or greased muffin pan.
Bake approximately 20-30 minutes or until golden.
