Ingredients

 3 pounds chicken wings, necks, and backs
 Carrots2 Small, peeled
 3 celery stalks, cut into large pieces
 Onions1/3 Cup (16 tbs), chopped
 Salt1/2 Teaspoon
 Pepper1/2 Teaspoon
 Parsley3/4 Tablespoon, chopped
 Water

Directions

1) Place all of the ingredients into a large soup pot, with enough water to cover. Cover and bring to a boil. Skim off the scum, re-cover, lower heat, and simmer for 1 3/4 hours.
