Silly Spaghetti Casserole Recipe
Ingredients
| 8 ounces uncooked spaghetti, broken in half | ||
| Parmesan cheese | 1/4 Cup (16 tbs), grated | |
| 1/4 cup cholesterol-free egg substitute | ||
| Frozen spinach package | 1/2 , thawed | |
| 3/4 pound lean ground turkey or 90% lean ground beef | ||
| Onion | 1/3 Cup (16 tbs), chopped | |
| Pasta sauce | 2 Cup (16 tbs), prepared | |
| Mozzarella cheese | 3/4 Cup (16 tbs) | |
| 1 green or yellow bell pepper, cored and seeded | ||
Directions
1. Preheat oven to 350°F. Spray 8-inch square baking dish with nonstick cooking spray.
2. Cook spaghetti according to package directions, omitting salt and oil; drain. Toss with Parmesan cheese and egg substitute. Place in prepared baking dish.
3. Drain spinach in colander, squeezing out excess liquid. Spray large nonstick skillet with cooking spray. Cook turkey and onion in skillet over medium-high heat until meat is lightly browned, stirring to break up meat. Drain off fat. Stir in spinach and spaghetti sauce. Spoon on top of spaghetti mixture.
4. Sprinkle with mozzarella cheese. Use small cookie cutter to cut decorative shapes from bell pepper. Place on top of cheese. Cover with foil. Bake 40 to 45 minutes or until bubbling. Let stand 10 minutes. Cut into squares.
