Siesta Cornbread Recipe
Siesta Cornbread is a wonderful flavored bread that is sure to entice your taste buds. I served this dish for a get together with my friends at home for tea. They loved it and have been haunting me for this Siesta Cornbread recipe ever since. Try it out!
Ingredients
1 package (12 oz.) corn muffin mix
1/2 cup chopped onion
2 tablespoons chopped pimento
1 to 2 tablespoons chopped jalapeno peppers
1 can (8 1/4 oz.) cream-style corn
1 egg
1/4 cup milk
2 tablespoons oil
Directions
Combine corn muffin mix, onion, pimento and peppers; stir in corn, egg, milk and oil.
Spoon batter into greased 2-quart ring mold.
Cook at LOW 6 minutes and MEDIUM-HIGH 5 to 6 minutes or until bread pulls away from center and sides of dish.
Let stand, 10 minutes.
Invert from dish and serve warm.
