Ingredients
2 slightly beaten eggs
3/4 cup soft bread crumbs
1/2 cup tomato juice
2 tablespoons snipped parsley
1/2 teaspoon dried oregano, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, minced
2 pounds lean ground beef
6 1-ounce thin slices boiled ham
1 1/2 cups shredded mozzarella cheese (6 ounces)
3 slices (4x4 inches each) mozzarella cheese, halved diagonally
Directions
1 In a large mixing bowl combine the eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper, and garlic. Add the ground beef and mix well. On foil, pat meat mixture to a 12x10-inch rectangle. Arrange ham slices on top of the meat, leaving a 3/4 inch border around all edges. Sprinkle shredded mozzarella cheese over ham. Starting from a short side, carefully roll up meat, jelly-roll style, using foil to lift; seal edges. Place roll, seam side down, in a 13x9x2-inch baking pan.
2 Bake in a 350° oven for 1 1/4 hours or until an instant-read thermometer registers 170° and juices run clear. (Center of roll will be pink due to ham.) Place mozzarella cheese wedges over top of roll; return to oven about 5 minutes or until cheese melts
