Ingredients

 Sponge cake1 Large
 Ricotta cheese1 1/4 Pound
 Granulated Sugar1 Cup (16 tbs)
 Vanilla extract1 Teaspoon
 2 tablespoons cognac, rum or creme de cacao
 Semi-sweet chocolate3 Tablespoon
 1 tablespoon chopped candied fruit
 Salt1 Pinch
 Powdered sugar

Directions

1. Split the cake into three layers of equal size.
2. Combine the cheese, sugar, vanilla and cognac and beat well with a wooden spoon until smooth and fluffy, or blend well in an electric blender.
3. Add the remaining ingredients except the powdered sugar and mix thoroughly.
4. Spread one of the layers with the cheese mixture and place another layer on top. Repeat with the remaining cheese mixture and sponge cake layer. Refrigerate the cake several hours. Dust the top with powdered sugar before serving.
