Siamese Fried Rice Recipe

2 tbsp. bacon fat or peanut oil
 
2 cups chopped onion
 
2 cups cooked rice
 
2 eggs beaten with 2 tbsp. soy sauce or more to taste
 
1 cup cooked chicken, diced
 
1 cup steamed soy sprouts
 
Salt to taste
 
Freshly-ground pepper

Directions

In large skillet or wok, heat fat.
Add onion and saute, stirring, until golden.
Stir in rice and saute for 3 minutes.
Add egg mixture, turning it into rice.
Do not keep stirring or rice will become sticky.
Add chicken and soy sprouts, turning carefully once or twice.
