Shrimps Creole Recipe
Ingredients
| Bacon fat or other shortening - 1/4 cup | ||
| Onions | 1 Cup (16 tbs), minced | |
| Green pepper | 1/2 Cup (16 tbs), minced | |
| Medium tomatoes - 4 , peeled and chopped | ||
| Consomme or fish stock - 2 cups | ||
| Salt | 1/2 Teaspoon | |
| Cayenne - Dash | ||
| Herb bouquet of parsley, crumbled dried thyme, and bay leaf | ||
| Raw shrimps - 2 pounds, shelled | ||
Directions
MAKING
1 In a pan, melt bacon fat and cook onion and green pepper in it.
2 Add in tomatoes, consomme, salt, cayenne, and herb bouquet.
3 Cover and simmer for 40 minutes, stirring occasionally.
4 Remove the herbs and discard.
5 Add in the shrimps.
6 Simmer gently for another 6 minutes.
7 Add salt and pepper if required.
SERVING
8 Serve with rice.
