Ingredients

 Bacon fat or other shortening - 1/4 cup
 Onions1 Cup (16 tbs), minced
 Green pepper1/2 Cup (16 tbs), minced
 Medium tomatoes - 4 , peeled and chopped
 Consomme or fish stock - 2 cups
 Salt1/2 Teaspoon
 Cayenne - Dash
 Herb bouquet of parsley, crumbled dried thyme, and bay leaf
 Raw shrimps - 2 pounds, shelled

Directions

MAKING
1 In a pan, melt bacon fat and cook onion and green pepper in it.
2 Add in tomatoes, consomme, salt, cayenne, and herb bouquet.
3 Cover and simmer for 40 minutes, stirring occasionally.
4 Remove the herbs and discard.
5 Add in the shrimps.
6 Simmer gently for another 6 minutes.
7 Add salt and pepper if required.

SERVING
8 Serve with rice.
