Shrimp-Tortellini Soup Recipe

Ingredients
1 (9 ounce) package fresh cheese tortellini
3 cups broccoli florets
4 teaspoons olive oil
1 pound medium shrimp, peeled and deveined
1 1/2 cups sliced crimini or white mushrooms
1/4 cup chopped red onion
2 (14 1/4 ounce) cans fat-free chicken broth
1 teaspoon ground ginger
1/2 teaspoon salt
Red onion slices, separated into rings (optional)
Directions
Bring 4 quarts water to a boil in a large Dutch oven.
Add cheese tortellini, and cook 4 minutes.
Add broccoli, and cook an additional 5 minutes or until tortellini is tender.
Drain in a colander, and set aside.
Heat olive oil in pan over medium-high heat.
Add shrimp, sliced mushrooms, and chopped onion; saute 3 minutes or until shrimp is done.
Add chicken broth, ginger, and salt; bring to a boil.
Add tortellini mixture, and cook until thor oughly heated.
Ladle soup into bowls, and gar nish with onion rings, if desired.
