Shrimp-Stuffed Tomatoes Recipe

The shrimp stuffed tomatoes can be served as a side in a meal. Made with cooked shrimp, scallions, green peppers and celery along with cream cheese and yogurt and added avocados, the shrimp stuffed tomatoes are filled in hollowed out tomatoes.

Ingredients

 
4 tomatoes
 
1 cup coarsely chopped cooked shrimp
 
2 tablespoons finely chopped scallion
 
2 tablespoons finely diced green pepper
 
1/2 cup finely chopped celery
 
1/2 cup plain yogurt
 
2 ounces cream cheese, room temperature
 
2 teaspoons white wine Salt and pepper to taste
 
1/2 cup chopped avocado

Directions

Slice top off tomatoes.
Scoop out pulp.
Flute edges if desired; drain upside down on paper towels.
Chill.
Combine shrimp, scallion, green pepper and celery in bowl.
Blend yogurt, cream cheese and wine together in bowl; add to shrimp mixture.
Add salt and pepper to taste.
Chill.
Add avocado just before serving; fill tomatoes.
