Shrimp-Stuffed Potatoes Recipe

Shrimp stuffed potatoes is a lovely seafood recipe made with cooked shrimps and baked potatoes. Stuffed in the potato shells with added cheese and cream along with fresh herbs, the shrimp stuffed potatoes can be served as the main course with vegetables on the side.

Ingredients

 
4 large baking potatoes
 
2 egg yolks Half-and-half cream
 
4 tablespoons minced fresh parsley
 
2 tablespoons chopped chives
 
1 cup chopped cooked shrimp
 
1/2 cup grated cheddar cheese

Directions

Place potatoes in baking pan.
Bake in preheated 375 °F oven 1 hour or until tender.
Do not turn off oven.
Cut thin slice from 1 side of each potato; scoop out pulp.
Leave firm shell; reserve shells.
Place pulp in medium-size mixer bowl.
Add egg yolks; beat with electric mixer until smooth.
Beat in enough cream to make mixture light and fluffy.
Fold in 2 tablespoons parsley, chives, and shrimp; spoon into reserved shells.
Sprinkle with cheese; return to baking pan.
Bake about 20 minutes, until cheese is melted and golden.
Sprinkle each potato with 1/2 tablespoon parsley.
