Shrimp Sauce Recipe

Ingredients
1/2 cup dry white table wine
3/4 cup water
2 sprigs parsley
1 small onion, cut in half
2 cloves
3 tbsp butter
1 cup sliced fresh mushrooms
1 tbsp flour
1/2 tsp salt
1/8 tsp pepper
2 tbsp lemon juice
10-oz. can frozen shrimp soup, thawed
1 egg yolk
1/3 cup heavy cream
Directions
Combine wine, water, parsley and onion stuck with the cloves in a saucepan.
Bring to a boil and boil hard until reduced nearly in half, about 5 minutes.
Strain and discard vegetables.
Measure out 2/3 cup of the liquid (if you have boiled it a little too long add enough wine or water to make the 2/3 cup).
Melt butter in saucepan.
Add mushrooms and cook gently 2 minutes.
Sprinkle in flour, salt and pepper.
Let bubble up.
Remove from heat and add strained wine mixture and lemon juice all at once.
Stir to blend.
Return to moderate heat and cook, stirring constantly, until boiling, thickened and smooth.
Add soup (undiluted) and heat gently until well blended.
Beat egg yolk and cream together with a fork and stir into hot mixture gradually.
