Shrimp Salad Recipe

Ingredients
2 1/2 cups water
2/3 cup brown rice
1/3 cup millet
1/2 teaspoon salt
1/2 dill pickle, chopped
1 tablespoon chopped onion
2 41/2 ounce cans shrimp
1 cup fresh or frozen raw peas
3/4 cup mayonnaise
1 avocado
Lettuce leaves
Tomato wedges
Directions
Bring the water to a boil in a medium saucepan.
Add the rice, millet, and salt, and cook until grain is tender and water is absorbed.
Allow to cool.
Add the dill pickle, onion, shrimp, peas, and mayonnaise.
Mix lightly with a fork.
Chill thoroughly.
Just before serving, peel and slice the avocado.
Toss with salad.
Serve on lettuce leaves, and garnish with tomato wedges.
NOTE: Cracked wheat or cracked rye may be substituted for the rice.
A combination of wheat, rye, and rice may also be used.
