1 lb (500 g) uncooked shrimp
 
1/2 cup (125 mL) water
 
1/2 cup (125 mL) button mushrooms, cut in four
 
2 medium-sized tomatoes, diced
 
6 peppercorns
 
Sauce:
 
2 French shallots or 6 green onions, chopped
 
1/2 cup (125 mL) white wine or white vermouth
 
1 bay leaf
 
1/4 tsp (1 mL) thyme
 
1 tsp (5 mL) basil
 
2 tbsp (30 mL) butter
 
2 tbsp (30 mL) flour
 
1 garlic clove, crushed or finely chopped
 
1 tsp (5 mL) tomato paste
 
1/2 cup (125 mL) water or fish fumet or clam juice

Directions

First, prepare the sauce.
Place the shallots or green onions, white wine or vermouth, bay leaf, thyme and basil in a microwave-safe dish.
Microwave, uncovered, 3 minutes at HIGH.
Mix together the butter and flour.
Add to the wine sauce, stir well.
Microwave 2 to 3 minutes at HIGH, stirring once.
Add the garlic, tomato paste and the liquid of your choice.
Stir well and microwave 4 minutes at MEDIUM-HIGH, stirring once.
