For the tartar sauce:

¼ cup tomatoes, chopped

¼ cup green onions, chopped

1 tbsp parsley, chopped

1 to 3 tsp garlic, finely minced

1 tsp hot sauce (Tabasco would be ideal)

1 tbsp fresh lemon juice

½ tbsp Cajun seasoning

2 tbsp melted butter

Salt and pepper to taste

For the shrimps:

1 lb shrimp (peeled and de-veined)

2 eggs (lightly beaten)

2 tbsp heavy cream

1 tbsp Cajun seasoning

½ tsp hot sauce

Pinch of salt and pepper

Directions

Take a cup of mayonnaise and add all the ingredients for the tartar sauce. Combine. Refrigerate.

Make a mixture of all ingredients for the shrimps (except shrimps). Let the shrimps marinate in this mixture (anywhere from 20 minutes to 2 hrs). Make a mixture of 2 cups breadcrumbs and 1 tbsp of Cajun seasoning. Roll the marinated shrimps in this mixture. Coat well. Take off excess flour and deep fry for approximately 3 minutes till golden brown.

Take a piece of French bread. Slit it into two. Spread a layer of tartar sauce on the insides on both sides. Add some lettuce leaves and the fried shrimps. Enjoy.
