Shrimp Pilau Recipe
Ingredients
2 cups rice
4 cups water
2 Cups finely chopped onions
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 cup yoghurt
2 pounds raw shrimp shelled and deveined
6 tablespoons butter
1 cup blanched ground almonds
2 teaspoons ground coriander
1/2 teaspoon cinnamon
Directions
Cook the rice in 4 cups salted water for 12 minutes.
Drain, reserving 3/4 cup water.
Toss together the onions, salt, pepper, yoghurt, and shrimp.
Melt the butter in a skillet, cook the mixture in it over high heat 2 minutes, shaking the pan frequently.
Stir in the almonds, coriander and reserved rice water.
Cover and cook 2 minutes.
Spread half the rice in a buttered casserole.
Arrange the shrimp in the center.
Cover with remaining rice and pour sauce over it.
Sprinkle with cinnamon, cover and bake in a 300° oven 15 minutes.
