Ingredients

 
1/2 pound shrimps, shelled and deveined
 
1 tablespoon oil for shrimps
 
2 tablespoons soy sauce
 
1/4 cup shredded celery
 
1/4 cup shredded onion
 
3 tablespoons oil for eggs
 
6 eggs
 
1/2 cup 'water
 
1 teaspoon salt

Directions

Cut the shrimps into 1/2 inch pieces.
Heat pan with 1 tablespoon oil and when it is hot add the shrimps and saute for 1 minute.
Add the soy sauce and stir once or twice.
Add the celery and onion and saute for another minute, stirring constantly.
Remove from the pan and set aside.
Beat the eggs, add the water and salt and mix well together.
Heat the pan with 3 tablespoons oil and pour the eggs in slowly.
Form into a pancake and place the shrimps and vegetables on it.
Fold over one edge and then the other and cook for 2 minutes.
Turn with a spatula and cook the other side for 1 minute and serve very hot on a shallow dish.
