Shrimp Kebab With Barbecued Rice Recipe
These shrimp kebabs with barbecued rice is a peppy party preparation of shrimp. Prepared with a herbed marinade with lemon juice, the shrimp kebabs are barbecued or grilled over hot coals and can be served as appetizers or a side at dinner or lunches.
Ingredients
Allow about 6 shrimp per skewer
1 green pepper
1 sweet red pepper
3 or 4 small white onions
3 or 4 very small tomatoes (cherry)
Marinade
1/2 cup oil
2 sprigs thyme
Juice of 1 lemon
Salt and pepper
Directions
Combine all marinade ingredients.
Shell and devein shrimp.
Arrange the kebob ingredients alternately on skewers, finishing with tomato; place in shallow pan.
Pour marinade over; leave at least 1 1/2 hours.
Cook over hot coals about 10 to 15 minutes, brushing frequently with marinade.
