Shrimp Curry With Raisins Recipe
Ingredients
2 tablespoons shortening
1/4 cup chopped onion
1/4 cup sliced mushrooms
1/2 teaspoon curry powder
1/2 teaspoon salt
Dash of pepper
1 pound shrimp, peeled and cleaned
4 lemon slices
1 cup bouillon
1/2 cup raisins
3 tablespoons flour
1 cup milk
Directions
Heat shortening in cooker.
Lightly saute the onion and mushrooms.
Add curry pow der, salt, pepper, shrimp, lemon, bouillon, and, raisins.
Close cover and set pressure regulator in place.
When regulator jiggles gently, cook for 2 minutes.
Cool at once under running water.
Combine the flour and milk and add to the liquid in open pressure cooker.
Over a low flame, stir constantly until the sauce thickens.
This may be served over rice if desired.
