Shrimp Crepes With Veloute Sauce Recipe

Ingredients
1 pound small shrimp, cooked, peeled and deveined.
4 egg whites
1/2 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon pepper
16 crepes
Double recipe Veloute sauce
Directions
Chop half the shrimp into 4 or 5 pieces each.
Beat egg whites until stiff.
Beat cream until stiff.
Combine cream and egg whites; add seasonings and chopped shrimp.
Divide mixture between crepes.
Roll and turn seam side down in a buttered baking dish.
Pour sauce over the tops of the crepes.
Bake at 350°F for 20 minutes.
During last three minutes, add rest of shrimp for garnish and heat only to warm.
