Shrimp Creole Sauce Recipe

Ingredients
1 pound fresh or frozen peeled and deveined shrimp
1 medium onion, chopped (1/2 cup)
1/2 cup chopped green pepper
1/2 cup chopped celery
2 cloves garlic, minced
1/4 cup butter or margarine
1 16 ounce can tomatoes, cut up
2 tablespoons snipped parsley
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 to 1/2 teaspoon ground red pepper
1 bay leaf
2 tablespoons cold water
4 teaspoons cornstarch
Hot cooked rice
Parsley sprigs (optional)
Directions
Thaw shrimp, if frozen.
In a 10 inch skillet cook onion, green pepper, celery, and garlic in butter or margarine till tender but not brown.
Add undrained tomatoes, parsley, salt, paprika, red pepper, and bay leaf.
Bring to boiling.
Reduce heat.
Cover and simmer 15 minutes.
Combine cold water and cornstarch.
Stir into tomato mixture.
Stir in shrimp.
Cook and stir till thickened and bubbly, then cook and stir 2 minutes more.
Remove bay leaf.
Serve over rice.
Garnish with parsley, if desired.
