Shrimp Cocktail With Tomato Juice Recipe

Of all the courses Appetizer happens to be my favorite and Shrimp Cocktail the recipe that represents it. Best enjoyed as an Appetizer this recipe was taught to me by a dear friend who also happens to be a great chef. It is an European kitchen invention. Most nutritionist swear by this recipe of Shrimp Cocktail when it comes to making something High Protein. In my estimation, if one is a chef, one needs to have a personal recipe of Shrimp Cocktail, just like I do.

Ingredients

 
Salt
 
2 red bell peppers
 
31/2 oz sliced onions
 
1/2 crushed garlic clove
 
2 tbsp concentrated tomato juice
 
2 tbsp olive oil
 
2 tsp sherry vinegar
 
1 tsp sugar
 
1/2 tsp dried thyme
 
2 tbsp mayonnaise
 
Pepper
 
1 oz shelled shrimp (prawns)
 
Lettuce leaves
 
4 unshelled shrimp (prawns)

Directions

Put the cucumber in a colander with a pinch of salt and drain.
Rinse and seed the red bell peppers, pat dry on kitchen paper and remove pith.
Cut the flesh into cubes.
Put the onions into a small casserole.
Cover and microwave on HIGH for 3 minutes.
Add the bell peppers.
Cover and microwave on HIGH for 5 minutes.
Drain the onions and peppers.
Puree the garlic.
Rinse the cucumber well and pat dry on kitchen paper.
Add the tomato juice and cucumber to the food processor and puree, gradually adding the oil, vinegar, sugar and thyme.
Pour the mixture into a bowl and stir in the mayonnaise.
Add salt and pepper to taste.
Stir in the shelled shrimp (prawns) carefully and chill in the refrigerator for at least 2 hours.
Arrange the shrimp (prawn) mixture on top.
Garnish with an unshelled shrimp (prawn).
