Ingredients

 
2 cups fresh shrimps, shelled
 
1/2 pkt. noodles
 
120 gms. spinach, cut into
 
2" length
 
4 spring onions, chopped
 
1/2 cup bamboo shoots, shredded
 
2 tomatoes, sliced
 
2 tsps. salt
 
1 tsp. chilli sauce
 
1 tbsp. soya sauce
 
1 cup oil

Directions

Cook noodles in boiling water.
Wash and drain well.
Keep aside till needed.
Heat 1 cup oil and fry the shrimps.
Remove.
In the same oil saute spinach, bamboo shoots and onions for 5 minutes.
Add the noodles, salt, soya sauce and stir well.
Sprinkle shrimps, chilli sauce and remove.
Place the noodles in a plate and garnish with tomato slices.
Serve hot.
VEGETARIAN VERSION:
Omit shrimps.
Add 1 cup fried minced soya bean instead and follow the recipe as directed above.
Note: For better flavour use four tablespoons wine to the noodles.
