Shrimp And Crab Papaya Recipe
Ingredients
3 oz. baby shrimp
2 tsp. mayonnaise
1/4 c. diced tomatoes, peeled
1/4 c. frozen or fresh peas, cooked
Cayenne pepper and lemon juice to taste
1 papaya, cut in half with seeds removed
1 cooked prawn (opt.)
3 oz. crab with 1 piece leg meat reserved for garnish
Garnishes: lettuce leaves, tomato, lemon wedges
Directions
Combine shrimp, 1 teaspoon mayonnaise, half the tomatoes and peas.
Season with cayenne pepper and lemon juice and place in one papaya half.
Butterfly the cooked prawn.
Combine crab, 1 teaspoon mayonnaise, remaining tomato and peas.
Season with cayenne pepper and lemon juice and add to other papaya half.
Place piece of crab leg meat on top of mound.
Garnish with tomato rose and lemon wedges.
Put on bed of lettuce.
