Ingredients

 
41/4 cups water
 
1 lemon, sliced
 
1/4 pounds large shrimp
 
1 1/2 cups cooked couscous
 
1/2 red bell pepper, chopped
 
1 (14 ounce) can artichoke hearts, drained and coarsely chopped
 
1/4 cup light mayonnaise
 
1/3 cup fresh lemon juice
 
3 tablespoons chopped fresh dill
 
1/2 teaspoon pepper
 
1/4 teaspoon salt

Directions

Combine water and lemon slices in a Dutch oven; bring to a boil.
Add shrimp, and cook 3 minutes or until shrimp turn pink.
Drain and rinse under cold water.
Discard lemon.
Peel shrimp, and cut in half lengthwise.
Combine shrimp, couscous, bell pepper, and artichoke hearts in a bowl; toss well.
Combine mayonnaise and next 4 ingredients; stir well.
Pour over shrimp mixture; toss well.
Cover and chill at least 2 hours.
Divide salad evenly among individual plates.
