Shrimp With Saffron Recipe
Ingredients
| 1 pound shrimp, shelled and deveined | ||
| Dry white wine | 1 Cup (16 tbs) | |
| Olive oil | 1 Tablespoon | |
| Tomato juice | 1 Cup (16 tbs) | |
| Lemon juice | 1 | |
| Parsley sprigs | 2 | |
| 1 branch fennel or celery | ||
| Thyme sprig | 1 | |
| Bay leaf | 1/2 | |
| Garlic | 2 Clove (5gm), crushed | |
| Peppercorns | 6 | |
| Powdered saffron | 1 Teaspoon | |
| Salt | To Taste | |
Directions
1. Combine all the ingredients and cook, covered, over high heat eight to ten minutes. Correct the seasonings, which should be sharp.
