Shrimp With Coconut Recipe
Ingredients
| 1 pound cooked peeled shrimp, deveined | ||
| 1 large onion, cut into quarters | ||
| Juice of 3 lemons | ||
| Sweetened coconut | 1 Cup (16 tbs) | |
| Red chili pepper | 1 Small, fried | |
| Coriander | 1/2 Teaspoon | |
Directions
Preheat oven to 400 degrees.
Arrange shrimp in baking dish.
Combine onion, lemon juice, coconut, chili pepper and coriander in blender container.
Process at medium speed until onion is pureed.
Pour mixture over shrimp, tossing gently to coat.
Bake, covered with foil, for 20 minutes.
