Ingredients
Dry white wine
2 teaspoons flour
1/2 cup chopped raw shrimp, reserved from the stuffing
2 egg yolks, lightly beaten
1 cup heavy cream
Salt and freshly ground black pepper to taste
Directions
1. Strain the pan drippings from the fish and rub the vegetable residue through a fine sieve.
2. Add enough wine to the strained portion to make one and one-fourth cups. Blend the flour with a little wine and add, stirring, to the mixture. Add the shrimp and bring to a boil.
3. Mix the egg yolks and the cream. Add to the shrimp mixture and cook over the lowest heat, stirring constantly, until the mixtui'e thickens. Do not let boil. Season with salt and pepper.
