Shrimp Vallarta Recipe

Ingredients
1 1/2 lb (750 g) fresh shrimp, medium-sized
Juice of 1 or 2 fresh limes
2 tsp (10 mL) coarse salt
2 to 3 tbsp (30 to 50 mL) vegetable oil
Directions
€¢ Split the shrimp in half lengthwise through the shell and tail.
€¢ Rinse out dark vein
€¢ Dry shrimp on a paper towel, set on a pie plate and sprinkle the cut side of the shrimp generously with the lime juice. Salt and let stand a few hours in the refrigerator.
€¢ When ready to serve, heat the vegetable oil 2 minutes at HIGH in a ceramic pie plate.
€¢ Place about half the shrimp in the hot oil and microwave until they turn pink, 3 minutes at HIGH.
€¢ Microwave the remaining shrimp in the same manner.
