Shrimp Toast Canapes Recipe

Even a bar of chocolate cannot lift my spirits as well as this Shrimp Toast Canapes. The Shrimp Toast Canapes is a glorious invention of the French cuisine. Shrimp is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. This Shrimp Toast Canapes when served as Appetizer is sure to please your family members. I am certain both of us will concur that this Shrimp Toast Canapes is simply scrumptious.

Ingredients

 
1 pound raw shrimp (or 12 oz. shelled and deveined frozen shrimp)
 
1 green onion, including part of green top
 
4 canned water chestnuts
 
1/2 teaspoon salt
 
1/4 teaspoon garlic salt
 
1/8 teaspoon pepper
 
1 1/2 teaspoons lemon juice
 
1 egg white
 
12 thin slices white sandwich bread, crusts removed

Directions

Shell and devein the raw shrimp, or defrost frozen shrimp.
Chop shrimp, onion, and water chestnuts into very fine pieces.
Put into a bowl with the salt, garlic salt, pepper, and lemon juice.
Mix until well blended.
Add unbeaten egg white, mixing it in well.
Put bread slices under the broiler until toasted on one side.
Turn over and spread untoasted side with the shrimp mixture.
This much can be done several hours ahead and appetizers covered with clear plastic film or foil.
