Shrimp Toast Recipe
Ingredients
| Raw shrimp | 1/2 pound, deveined | |
| Green onion | 2 Tablespoon, chopped | |
| Water chestnuts | 2 Tablespoon, finely chopped | |
| Low sodium soy sauce | 2 Tablespoon | |
| 1 teaspoon Oriental sesame oil | ||
| 1 egg white, slightly beaten | ||
| 6 slices white sandwich bread, crusts removed | ||
| Red and yellow bell peppers and green onions for garnish | ||
Directions
Finely chop shrimp.
If using food processor, process with on/off pulses, about 10 times or until shrimp are finely chopped.
Combine shrimp, onion, water chestnuts, soy sauce and sesame oil in medium bowl; mix well.
Stir in egg white; mix well.
Toast bread lightly on both sides.
Cut toast diagonally into quarters.
Spread shrimp mixture evenly over toast to edges.
Place toast on foil-lined baking sheet or broiler pan.
Broil, 6 inches from heat, 4 minutes or until lightly browned.
