Shrimp Stuffed Artichokes Recipe

Ingredients
| Artichokes | 4 Medium | |
| 1 cup cooked shrimp, shelled and deveined | ||
| Soft bread crumbs | 1 1/2 Cup (16 tbs) | |
| Onion | 1/4 Cup (16 tbs), finley chopped | |
| Salt | 1/2 Teaspoon | |
| Fresh lemon juice | ||
| Egg | 1 , beaten | |
| Olive or salad oil | ||
Directions
1. Prepare artichokes for stuffing Preheat oven to moderate (350° F.).
2. Cut the shrimp into small pieces and combine with bread- crumbs, onion, salt, two teaspoons of lemon juice and the egg. Spoon the mixture into the artichokes.
3. Place the artichokes in a small baking pan and pour boiling water around them to the depth of one inch. Add one tablespoon lemon juice and brush the artichokes generously with olive or salad oil. Cover with aluminum foil and bake thirty minutes.
