Ingredients

 
1 tsp low-calorie margarine
 
3 tsp onion, chopped
 
2 tsp parsley, finely snipped
 
6 oz. Brilliant cooked frozen shrimp, thawed
 
2 eggs, slightly beaten

Directions

Melt margarine in a nonstick skillet.
Add the onion and parsley.
Cook and stir for 1 minute; remove from heat.
Drain the liquid from the shrimp package into the beaten eggs.
Pour shrimp into skillet.
Place skillet over medium heat and cook until most of the moisture has evaporated.
Beat the shrimp liquid into the eggs; pour eggs over the onion, parsley, and shrimp in the skillet.
Reduce heat, cover, and cook until eggs are firm.
Turn over onto a heated serving plate.
