Garlic Shrimp Scampi Recipe
Ingredients
| Extra virgin olive oil | 1/2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Dried oregano | 2 Teaspoon, chopped | |
| Garlic | 2 Clove (5gm), chopped | |
| 1 1/2 pounds jumbo shrimp, shelled and deveined | ||
| Lemons | 2 , cut into wedges | |
Directions
1. On a large flat plate, combine olive oil, salt, pepper, oregano, and garlic. Add shrimp to oil mixture and turn them to coat well. Marinate shrimp, turning several times, 2 hours in refrigerator.
2. Skewer marinated shrimp, threading them through the middle of the body and fitting them so they just barely touch. Place skewers in broiler pan and brush with marinade. Broil 3 inches from the heat 7 minutes on one side. Turn shrimp over and brush with marinade. Continue to cook 5 minutes, or until succulent and opaque inside and well seared on outside. Pass lemon wedges on the side.
