Ingredients
1 16-ounce can tomatoes
2 cloves garlic, chopped
1 onion, chopped
1/4 cup olive oil
2 tablespoons parsley, chopped
2 tablespoons pimento, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon basil
1/4 teaspoon oregano
Dash Tabasco
1 1/2 pounds raw shrimp
Parmesan cheese
Directions
Drain juice from tomatoes, reserving it.
Chop tomatoes and return juice to them.
Heat oil in a large skillet, and lightly brown the garlic and onion.
Pour remaining ingredients, except shrimp, into skillet, and stir only until mixed.
Do not boil.
Place shrimp in crock cooker, and pour over sauce.
Cover and cook at Low for 3 to 4 hours.
Sauce may be thickened before serving, if desired, using a little roux.
