Ingredients

 
Bacon- 3 strips
 
Flour- 3 tablespoons
 
Fresh or Frozen Okra- 1 3/4 pounds, sliced
 
Onion- 1 large, chopped
 
Garlic- 1 clove, minced
 
Tomato Juice- 2 cups
 
Italian-Style Tomatoes- 1 can (16 ounce), chopped
 
Water- 4 cups
 
Bay Leaves- 3-4nos.
 
Salt- 1 teaspoon
 
Red Pepper- 1/4-1/2 teaspoon, crushed
 
Worcestershire Sauce- 1 tablespoons
 
Pickling Spice- 1 tablespoon
 
Lemon Pepper- 1/4-1/2 teaspoon
 
Thyme- 1 teaspoon
 
Dried Sweet Chili Pepper- 1/2 teaspoon
 
Green Bell Pepper- 1/2 cup, chopped
 
Celery- 2 stalks, chopped
 
Raw Shrimp- 2 pounds, cleaned

Directions

MAKING
1) In large pot; saute bacon until crisp.
2) Using a slotted spoon remove bacon and set aside.
3) In the same pot and same fat, stir the flour and cook, stirring until light brown.
4) Mix in the okra, onion, and garlic.
5) Allow to cook until light brown, stirring occasionally.

FINALIZING
6) Stir in all the ingredients except shrimp and cooked bacon.
7) Reduce the heat and simmer for 1 to 2 hours.
8) Add shrimp and crumbled bacon.
9) Allow to cook until shrimp curl, turn pink and tender.

SERVING
10) Serve Shrimp Gumbo hot garnished with chopped parsley if desired.
