Shrimp And Chicken Gumbo Recipe
This Shrimp gumbo is the best seafood and okra dish that I've ever tasted ! Try this creamy savory spiced and herbed accompniment with a bowl of hot rice. Tell me if you like this Shrimp Gumbo.
Ingredients
1/4 cup (1/2 stick) butter or margarine
1 onion, peeled and chopped
1/2 stalk celery, thinly sliced
2 tablespoons all-purpose flour
2 cups chicken broth (homemade, canned or from bouillon cubes)
1 can (16 ounces) tomatoes (undrained), coarsely chopped
1 can (14 ounces) sliced okra (undrained)
1/4 teaspoon thyme leaves
1 small bay leaf
1/4 teaspoon salt
Dash ground red pepper
12 medium peeled and deveined shrimp
1 cup cooked rice
Directions
1. Put butter, onion and celery into a 3-quart microwave-oven-safe casserole. Cook uncovered in microwave oven 3 to 4 minutes at High, or until tender; stir once.
2. Mix flour into onion mixture. Add chicken broth gradually, stirring constantly. Cook uncovered in microwave oven 5 to 6 minutes at High, or until slightly thickened; stir once.
3. Add undrained tomatoes, undrained okra, seasonings and shrimp to sauce; stir. Cook uncovered in microwave oven 12 minutes at High, or until shrimp are tender and gumbo is hot.
4. Put 1/4 cup cooked rice into each large soup bowl; ladle hot gumbo into bowls.
