Shrimp Creole Soup Recipe
Ingredients
1/2 cup sliced celery
1/2 cup sliced green onions
1 clove garlic, minced
1 tablespoon vegetable oil
1 pouch Chicken Rice Soup Mix
1 can (about 15 ounces) tomatoes, undrained, cut up
1 cup water
1 small bay leaf
1/4 teaspoon sugar
1/8 teaspoon dried thyme leaves, crushed
1/8 teaspoon pepper
Generous dash hot pepper sauce
1/2 pound medium shrimp, peeled and deveined
Directions
In 2-quart saucepan over medium-high heat, cook celery, green onions and garlic in oil until celery is tender, stirring often.
Stir in soup mix, tomatoes with their liquid, water, bay leaf, sugar, thyme, pepper and hot pepper sauce.
Heat to boiling, stirring occasionally.
Reduce heat to low.
Cover; simmer 5 minutes.
Stir in shrimp.
Cover; simmer 5 minutes more or until shrimp are opaque.
Remove bay leaf before serving.
