Flour- 4 round tablespoons
 
Celery- 1 stalk, finely chopped
 
Green Onions- 15nos, minced

Yellow Onion- 1 small, peeled and finely chopped
 
Garlic- 2 cloves, minced
 
Whole Italian-Style Tomatoes- 1 can (16 ounce), peeled and drained
 
Tomato Sauce- 1 can (8 ounce)
 
Parsley- 12 sprigs, minced
 
Olives- 1 tablespoon, minced
 
Dry Red Wine- 4 tablespoons
 
Basil Leaves- 4 whole, crushed
 
Cloves- 1 whole
 
Allspice- 6 whole
 
Cayenne- 1 teaspoon
 
Mace- 1/4 teaspoon
 
Chili Powder- 1/4 teaspoon
 
Dried Basil- 1/4 teaspoon
 
Dried Thyme- 1/2 teaspoon
 
Lemon- 1no., squeezed and strained
 
Water- 2 cups
 
Salt- to taste
 
Freshly Ground Pepper- to taste
 
Fresh Shrimp- 2 pounds, shelled and deveined

Directions

MAKING
1) In a large non-stick pan, make a roux with the oil and flour.
2) Stir in all the vegetables, tomato sauce, and parsley, stirring until thoroughly heat for 5 minutes.
3) Mix in all the remaining ingredients, except shrimp.
4) Allow to cook for 30 minutes, stirring frequently.
5) Add shrimp and cook until the shrimps turn pink.

SERVING
6) Serve the Shrimp Creole hot with hot steamed rice if desired.
