Shrimp Coconut Fish Sauce Recipe

Ingredients
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup Coconut Milk
1/2 pound medium-sized raw shrimp, peeled, deveined, and coarsely chopped
1 tablespoon chopped onions
1 clove garlic, peeled and minced
3/4 teaspoon salt
Pinch of freshly ground black pepper
Pinch or more of cayenne pepper, to taste
1 cup tomato sauce
Directions
Melt 1 tablespoon butter in a small heavy saucepan over medium heat.
Add the flour; stir and simmer the roux 2 or 3 minutes.
Gradually stir in the coconut milk.
Simmer the coconut sauce, stirring occasionally, 10 to 15 minutes.
While sauce is simmering, saute the shrimp, onions, and garlic for 3 or 4 minutes in remaining tablespoon of butter, until shrimp turn pink and onions soften nicely.
Add the salt, freshly ground black pepper and cayenne pepper, to taste.
Saute the spiced shrimp a few moments to enliven the flavors.
Finally, add the tomato sauce and let simmer a few minutes more.
Combine the shrimp sauce with the coconut sauce.
