 1 1/2 pounds raw shrimp, shelled and deveined
 Butter5 Tablespoon
 Onion1 Small, minced
 Stalk celery1 , sliced
 Carrot1 Small, sliced
 Chicken stock3 Cup (16 tbs)
 Thyme1/4 Teaspoon
 Salt1/4 Teaspoon
 Heavy cream1 Cup (16 tbs)
 Dry sherry4 Tablespoon
 Unsweetened

Directions

Grind shrimp in a food processor fitted with a steel blade.
Melt butter in a saucepan and sauté onion, celery and carrot until tender.
Add shrimp and cook for 5 minutes, stirring often.
Add stock, thyme and salt; simmer, partially covered, for 30 minutes.
